Omachi is a capricious sake rice strain. With only 500 hectares planted in the Okayama Prefecture, it has been nicknamed “maboroshi no sakamai” (phantom sake rice) due to its scarcity. Moreover, the fact that it dissolves quickly makes it a very hard variety to brew. However, in capable hands, it produces some of the most sought-after sakes. The talented tōji Onishi Tadayoshi, creator of the coveted brand Jikon, has mastered Omachi to create a true jewel of a sake. This cuvée is in our humble opinion the pearl of the Jikon range, striking balance between aromatic intensity and depth.
