The “entry” bottling (does such a thing exist with Jikon?) made with Hattan-Nishiki (Hiroshima) for main rice and Yamada-Nishiki (Hyōgo) for kōji rice. Riceyer than most Jikon bottles, you still perceive the influence of the No. 9 yeast, one of the first ginjō yeast. A sake that can righteously be paired with tomato sauce in all of its variations.
