There is no real official paddy classification system outside of Hyōgo Prefecture. However, if there was one in Okayama, Akaiwa would certainly be of Cru level. It’s with this premium omachi that the 1898 cuvée is made. Based on a 1898 recipe, tōji Mitobe-san uses the kimoto method to add roundness and personality to this sake. The dry, crisp finish is due to the harder brewing water.
