There are many regional interpretations of the kimoto process. In Akita it is much different than what you can find further south in the Kansai region. Named Akita-ryu kimoto (Akita style kimoto), it’s got a more elegant profile. Kodama Jōzō has contributed to the development of that style by inventing a technique making use of electric drills in lieu of the traditional wooden oars (kai) for the yama-oroshi step. The resulting sake is more refined, without lacking character. This kimoto junmai from Taiheizan brand is an excellent introduction to this style, which has stood the test of time and won’t break the bank!
