One of the first sakes to go through a malolactic fermentation, this junmai has a similar although different profile than the 1898.  The lactic notes perceived on the finish are not due to the kimoto process but rather because of malo. It is also more aromatic than the 1898 as a result of the rice used. Dewasansan is THE sake rice of Yamagata. Named after the 3 sacred mountains of Dewa, revered for centuries. Even though the polishing ratio is 60%, it is classified as junmai rather than ginjō as it shows more cereal flavours closely associated with a  junmai
