Fukurokuju Shuzō is part of the new generation of breweries in Akita Prefecture focusing on quality. A member of the prestigious NEXT FIVE association, alongside world renowned breweries such as Aramasa Shuzō and Yamamoto Shuzō, Fukurokuju Shuzō makes low intervention sakes following the Sannai guild principles. With the legendary Takahashi-Tōji as one of its leading figures, much effort is made not to “disturb” the moromi (main mash) while brewing. For example, the moromi is not stirred, the yeast providing enough convection movement. This tokubetsu junmai is made with two local rice varieties Akita Sake Komachi for kake-mai (main rice) and Gin No Sei for kōji-mai (kōji rice). Comes in isshobin (1800 mL) to create the illusion you are in a cool sake bar in Ebisu.
