Niida-san is somewhat of a poster child for the shizenshu (“natural sake”) movement. So much that he has named his flagship brand after it. In addition to being brewed with organic rice (shizenmai), no yeast is added. Meaning that the ambient microorganisms in the work environment and on the rice take care of fermentation. A generous and structured sake, notably due to the fact that it wasn’t diluted following pressing (genshu).
