Anchored in the shizenshu philosophy, this sake aims to be as “natural" as possible. It is composed of a blend of 5 varieties of organic rice (shizenmai) and without lactic acid input. To make up for this, Niida Honke uses white kōji, somewhat of a rarity in the sake world. The shiro-kōji brings more acidity which cleans the palate and makes Odayaka even more crushable and versatile.
