After working in Burgundy with one of the founding fathers of natural wine production in the region, Philippe Pacalet, Takahiro Nagayama became obsessed with the notion of terroir. Now kuramoto-tōji (president and master brewer) of Nagayama Honke Shuzōjō in Yamaguchi, he transposed this passion to his own terroir. For him, there wasn’t such a big gap between the calcareous soils of Burgundy and the limestone-rich water of the Akiyoshidai plateau. This is the water he uses to brew this refined and vibrant tokubetsu junmai, made with Yamada-Nishiki and Hattan-Nishiki no.1.
