Even though Yamaguchi Shuzōjō has produced excellent sakes in the Fukuoka Prefecture on the island of Kyūshū for nearly 200 years, this umeshu has a shōchū (japanese spirit) base. This is a testament to the quality of the shōchū hailing from Kyūshū. As a matter of fact, only Fukuoka and Saga prefectures produce more sake than shōchū on the island. Umeshu is an alcohol in which ume, a stone fruit halfway between an apricot and a plum, has macerated in sake or spirit. This versatile beverage can be enjoyed on the rocks or in a cocktail at the beginning of a meal, or slightly chilled as a digestif. With its sweet and sour profile, the Uguisutomari is delicious on all occasions.
