A few years ago, Masayuki Imanishi had to suddenly take over the family brewery following the unexpected death of his father. Without any true sake brewing experience, his learning curve was excessively steep. Nevertheless, today this small Nara Prefecture sakakura produces some of the most sought-after sakes from the Kansai region. This junmai daiginjō is part of the “Roman Series” (roman shirīzu), which is on the higher end of the Mimurosugi offering. Fresh, floral and delicate, it is a must try for the ginjō aficionado.
